Mushroom conserva, mizuna, crème fraiche, sourdough

Bear Creek steaks, smoked and pickled cabbage, fermented chili honey

Grilled bok choy, Sequatchie Cove Shakerag aioli, dill oil, smoked egg yolk "bottarga"

Lettuce, benne-tahini dressing, radish, flowers, Maid-n-Meadows Tomme-Belina

Smoked lions mane, burnt onion soubise, chili jam, herbs
